Get a food scale. You can find good ones for $10-20. I use weight measures for baking to keep the end product consistent.

When baking, all ingredients need to be at room temp unless otherwise noted.

Source the best butter you can find with the highest fat content, preferably organic and pasture-raised. It should be yellow, not white butter. Where are pesticides stored? In fat. Buy organic butter.

I use organic flour as much as possible. It keeps my glyphosate exposure low so I can tolerate as much gluten as possible!
